I love making sauce with the Reaper! With this one I have added the unique flavor of smoke from mesquite wood. Most folks use Hickory, but it is a little too harsh for this sauce. It has a great flavor. I temper the heat with some sweet peppers and some Fresno peppers as well ending with a medium heat smokey sauce. I ferment everything with a touch of complementary spices and garlic. The sweet peppers slow down the heat but add to the sweet flavor of the Reaper which has a slow heat response. I add a few Fresno peppers to bring out a bit of up-front heat. This is my most versatile smokey sauce that works on anything you might want to add a hint of smoke to. Enjoy!
