I was born in New Mexico and raised on Hatch Chile. My mom put them in and on about everything. I make this sauce with the intent of preserving the true flavor of fire roasted Hatch chiles that you can put on anything the needs a little special flavor.
Hatch chiles are a special New Mexican pepper, grown specifically in the Hatch Valley region. Like Champagne, this pepper must be from the Hatch region in order to claim that name. Their unique flavor is said to be imparted from the rich soil of the Rio Grande area where they are grown, though they’re delicious wherever you can find them.
